{"id":291,"date":"2019-02-01T19:13:57","date_gmt":"2019-02-01T19:13:57","guid":{"rendered":"https:\/\/www.statehotel.com\/blog\/?p=291"},"modified":"2019-02-28T19:14:06","modified_gmt":"2019-02-28T19:14:06","slug":"ben-paris-culinary-team","status":"publish","type":"post","link":"https:\/\/www.statehotel.com\/blog\/ben-paris-culinary-team\/","title":{"rendered":"Introducing the Ben Paris Restaurant Team"},"content":{"rendered":"<div class=\"room-right-text-left\">\n<div class=\"room-text\">\n<p>Ben Paris has brought together a crew of highly talented culinarians and mixologists to lead this downtown Seattle restaurant.<\/p>\n<p>Get to know our creative team below.<\/p>\n<h2><img decoding=\"async\" style=\"font-size: 16px;\" src=\"https:\/\/www.statehotel.com\/images\/specials\/Quinton-Stewart-Headshot.jpg\" alt=\"Quinton Stewart \u2013 Executive Chef\" \/><\/h2>\n<h2>QUINTON STEWART \u2013 EXECUTIVE CHEF<\/h2>\n<p>A 15-year veteran of the restaurant industry, Stewart knew early on he wanted to become a chef.<\/p>\n<p>Born and raised in Seattle, he washed dishes in a restaurant as a teenager.<\/p>\n<p>He soon realized that if he worked quickly enough the chefs would let him prep in the kitchen.<\/p>\n<p>They taught him basic skills, and before long he was on the line.<\/p>\n<p>Out of culinary school he cooked in the downtown Seattle dining scene, landing a gig at Tilth with Maria Hines Restaurants.<\/p>\n<p>Determined to take on New York City, Stewart moved east to work and continue training at top restaurants, including Luksus, ACME and The Waverly Inn.<\/p>\n<p>He topped that with a yearlong stint in San Francisco, cooking in Japanese farm-to-table restaurant NOJO and staging in Michelin-starred kitchens before returning home for the role as Executive Chef of 99 Park.<\/p>\n<p>He was the Chef de Cuisine at Thompson Hotel, and most recently worked as Culinary Director for the Hitchcock Restaurant Group.<\/p>\n<p>Quinton\u2019s cooking is globally-inspired while letting the natural ingredients shine in his dishes.<\/p>\n<p>His philosophy in cooking is \u201cDon\u2019t cook to impress people, cook to make them happy.\u201d<\/p>\n<\/div>\n<\/div>\n<hr class=\"room-divider\" \/>\n<div class=\"room-left-text-right\">\n<div class=\"room-text\">\n<h2><img decoding=\"async\" style=\"font-size: 16px;\" src=\"https:\/\/www.statehotel.com\/images\/specials\/Reid-Kendall-Headshot.jpg\" alt=\"Reid Kendall \u2013 General Manager\" \/><\/h2>\n<h2>REID KENDALL \u2013 GENERAL MANAGER<\/h2>\n<p>With over 20 years\u2019 experience in hospitality, Reid Kendall brings an impressive background to his new role as General Manager.<\/p>\n<p>Born in the Midwest, Kendall grew up on a small farm.<\/p>\n<p>While raising cattle, he developed a love for gardening, canning and home cooking.<\/p>\n<p>He began his career producing off-Broadway theater, where he crossed paths with Abigail Gullo (Assistant GM and Bar Manager).<\/p>\n<p>In addition, he began designing and managing national and international touring productions.<\/p>\n<p>He eventually discovered his love for hospitality and food and beverage management working in New York City\u2019s hotel industry, including the Maritime Hotel and Gemma at the Bowery Hotel.<\/p>\n<p>After moving to Seattle in 2015, Kendall worked at popular destinations such as Mamnoon, Tallulah\u2019s, and Scout.<\/p>\n<p>But it was at The Nest at the Thompson Hotel where he met Quinton Stewart.<\/p>\n<p>Most recently he oversaw the massive project of developing and launching the Lincoln South Food Hall in Bellevue.<\/p>\n<p>Kendall loves creating fun experiences for his team and guests, leaving a memorable mark on an otherwise ordinary day.<\/p>\n<p>On his rare day off, he hosts dinner parties with his husband Jason and takes care of Reilly, the world\u2019s most beautiful four-legged pup.<\/p>\n<\/div>\n<\/div>\n<hr class=\"room-divider\" \/>\n<div class=\"room-right-text-left\">\n<div class=\"room-text\">\n<h2><img decoding=\"async\" src=\"https:\/\/www.statehotel.com\/images\/specials\/Abigail-Gullo-Headshot.jpg\" alt=\"Abigail Gullo \u2013 Assistant General Manager &amp; Bar Manager \" \/><\/h2>\n<h2>ABIGAIL GULLO \u2013 ASSISTANT GENERAL MANAGER &amp; BAR MANAGER<\/h2>\n<p>Known for her incredible drinks, Abigail Gullo\u2019s career is too full of accolades to list them all.<\/p>\n<p>Gullo grew up in Hyde Park, NY and began her career in the arts.<\/p>\n<p>She started off as a New York\u2013based theater teacher and off-Broadway actress.<\/p>\n<p>In her free time, Gullo discovered her love for mixology, whether it was learning the histories of spirits or experimenting with cocktails at home.<\/p>\n<p>Realizing that this was more than just a hobby, she found \u2013 and fell ardently in love with \u2013 a career in mixology, eventually becoming head bartender at Fort Defiance in Brooklyn in 2010.<\/p>\n<p>Gullo decided to move to New Orleans in 2012, where she landed the job of Head Bar Chef for SoBou.<\/p>\n<p>A few years later, she joined the beverage team as Head Bartender at Comp\u00e8re Lapin, where she helped develop the restaurant\u2019s cocktail menu.<\/p>\n<p>Throughout her career Gullo has earned numerous awards.<\/p>\n<p>Eater New Orleans\u2019 \u201cBartender of the Year\u201d in 2014.<\/p>\n<p>Heaven Hill Distillery\u2019s \u201cBartender of the Year\u201d in 2016.<\/p>\n<p>Induction into Tales of the Cocktail\u2019s \u201c2018 Dame Hall of Fame\u201d for her unique and lasting contributions to the global hospitality industry.<\/p>\n<p>You get the picture.<\/p>\n<p>New to Seattle, Gullo is excited to share her passion for drinks with the city and develop a killer bar program to serve our thirsty guests.<\/p>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Ben Paris has brought together a crew of highly talented culinarians and mixologists to lead this downtown Seattle restaurant.
